Hippy Day!

It's Thursday! Which means... Raw vegan day! I look forward to my day of giving my digestive system a little break from breaking down cooked food and animal proteins. Plus I get to constantly graze throughout the day and today I had one hell of an appetite.

I started the day with my Mint Choc Chip Smoothie, an idea I came up with a few days ago and was waiting for a non protein shake day to trial ( because my protein powder makes everything taste like vanilla ice cream!).

To make this I used - 1 frozen banana, 1 very large handful of spinach, 250ml almond milk, 1 tablespoon of organic cacao powder and some fresh mint to taste. I then topped with raw cacao nibs. Et voila! It was beautiful.

I think also some good quality peppermint oil could replace the fresh mint nicely if need be.

So that started my day off with a taste for chocolate! Luckily I had bought a choc mint flavoured Nakd bar last time I popped into my local health food store as I had never seen that flavour before and if there's one thing I love, it's chocolate. And mint.

I love Nakd bars. They aren't much to look at but what do you expect from whole natural food smooshed together?! For me they taste really sweet and this one particularly hit the spot. The rhubarb and custard one, ginger bread one and cashew cookie are all favourites of mine. They all have the same amount of ingredients in them and no nasties. Perfect :) guilt free snacking at its best! I should mention - the reason I don't eat these daily is because the main ingredients (usually dates) are typically high glycemic which means they release energy quickly rather than long lasting - making them a good snack if you're on the go and need a quick energy boost. Just because a food is a Whole-food doesn't mean it won't give you cheeky insulin spikes.

Then I had a plum... Then I had some coconut and pomegranate followed by my lunch. It was a good morning for snacks. I got the coconut and pomegranate from Morrisons, they have a little refrigerated fruit section that always has good deals. These two were on 2 for £2 - along with lots of other goodies. For lunch I just made a pepper and tomato salad with pistachios and cashews followed my a raspberry, blueberry and beet root smoothie. Which tasted completely of beet root... Weird I know. I don't even eat beet root but I love it in juices, it is somewhat an acquired taste though so I don't recommend this if you're not used to eating them or making smoothies!

I made the same dinner as I had last week as I still had my rice papers to use up and I enjoyed it so much last time. I can't wait until the sun is shining and I can sit outside and have these for lunch, they're so good and taste so fresh! Last week I just had sweet chilli dipping and this week I had the addition of soy with sesame seeds. Delicious.

Finally! For pudding... I had a nice cup of my 3 ginger tea with some blueberries, raspberries and the last of my fresh coconut (YUM). With a little bar of raw chocolate by 'the raw chocolate company'. I've wanted to place an order with them for ages and found that my local health food store stocks these little 99p 22g servings so I bought a couple last week. I LOVE dark chocolate and these are so delicious, and there's no crap in them see!

All made from good ingredients. What I loved most about my purchase was that the lovely lady in the store gave me a recipe for raw chocolate I can make at home! I already have most of the ingredients for it too so look out for that in my future posts.

On another note, tomorrow is month 3 progress picture day. I haven't published my pictures yet as I'm still too nervous and I don't think I'll see much change this month. Although I've eat mostly clean for the whole month, I sprained my shoulder and that has limited the amount of exercise I have done. Also the weather has been so cold and I'm a massive wimp. Back to crossfit  next week though so Aprils progress pictures should show a big change, I'm ready for it! Going to kick some butt!

Even if the progress pictures don't show much of a change, I'm still so happy with my progress, remember, slow progress is better than no progress! I feel fantastic every day, my stomach fat is disappearing so much... It doesn't fall with gravity when I lie on my side anymore which is amazing! And probably a little graphic for some of you haha so sorry about that but that is what happens. I have always had a fat tummy and its the one area I'm determined to get flat! So watch this space.
