Cheats Cheesecake!

As I mentioned briefly in my last blog, Dan made me a frozen cheesecake for valentines day.
Unfortunately I can't kid myself into thinking this is mega 'healthy' but it is limited in processed ingredients which is what I like and makes it special :)

Instead on making a buttery biscuit base, this cheese cake uses dates and almonds. Probably just as high in calories but nice clean ingredients :-) I was told it was also very easy to make!

Here's the recipe

For The Crust:
300g almonds
12 fresh pitted dates
2tbsp coconut oil
A pinch of salt

For The Filling
250ml fresh or frozen raspberries
250ml fresh or frozen strawberries
1/2 lemon squeezed
125ml honey, agave or maple syrup
250ml mascarpone cheese
250ml quark or full fat Greek yoghurt

Chuck the almonds in a food processor for a minute
Add dates, coconut oil and salt and continue to process until it all comes together
Flatten it out into the bottom of your spring form tin
Store in the fridge for 10 minutes whilst you make the filling

Mix the berries, lemon juice and honey in a blender
Stir together the mascarpone and quark with the berries in a bowl and pour on top of your base.
Put it in the freezer for 1-2 hours (if its in for longer you'll have to take it out a while before eating to let it soften a bit).

I've cut mine up into servings and left it in the freezer so that I can have a nice treat when I'm at dans house :)

I really liked this - similar to the pancakes though this does not taste like ordinary cheesecake! Using subsidised ingredients does alter taste but this was more than sweet enough for me. I thought it tasted good and knowing it's full of good ingredients makes me feel good too :-)
